It started with the wine list. Every bottle we picked for this dinner carries a story — a Grüner Veltliner made by monks at an Austrian monastery, an Albariño from the coastal town where the Camino de Santiago pilgrimage begins, a red named for St. George, another for St. Lawrence, and a Priorat grown on terraces called the Scala Dei — the stairway to God.


We're building the menu around them, and we're keeping it a surprise for now. What we will tell you: five courses, five wines, perfectly curated for dining amongst the stained glass.
